It then goes through partial, low-temperature fermentation in stainless steel tanks, followed by further fermentation in French oak barrels for around 3 months. This wine has a subtle aromatic bouquet with notes of infusion, dried fruit, pear, peach, apricot, lemon tart, honey and white flowers. It has fine minerality, and the juice is sharp and saline.
